Tropical Papaya Breakfast Bowl

A ripe papaya is its own serving bowl, which is most of the appeal. Split it lengthwise, clear out the seeds, and you have a vessel that holds yogurt and fruit and does not need a recipe so much as a plan for the ten minutes before breakfast.

Choosing the fruit is the whole game. A papaya ready to eat gives slightly under your thumb near the stem and smells faintly sweet — underripe fruit tastes green and vaguely soapy, and no amount of honey fixes it. Peel it if you prefer to dice, or leave the skin on and scoop straight from the half.

Lemon Extra Virgin Olive Oil and a spoonful of Strawberry Rhubarb Vinegar sound unusual over yogurt until you try them. The acid keeps the papaya from reading as one-note sweet, and the olive oil gives the whole bowl a richness that granola alone never delivers.

2 servings

1/2 papaya

Ingredients

• 1 large ripe papaya, halved and peeled
seeds scooped and reserved
• 1 cup plain Greek yogurt
• 2 Tbsp granola
• 1 Tbsp honey
• 1 tsp Lemon Extra Virgin Olive Oil
• 1 tsp Strawberry Rhubarb Vinegar
• 1 lime, cut in wedges
• 1 pinch flaky sea salt

Instructions

1. Cut the papaya in half lengthwise from stem to tip.
2. Scoop out the black seeds with a spoon. Rinse and dry a teaspoon of them if you want to use them as a peppery garnish.
3. Peel the halves if you are dicing, or leave the skin on to serve straight from the shell.
4. Whisk the yogurt with the honey until loose and pourable.
5. Spoon the yogurt into the papaya halves.
6. Drizzle with the Lemon Extra Virgin Olive Oil and the Strawberry Rhubarb Vinegar.
7. Top with granola, a pinch of flaky salt, and a squeeze of lime just before eating.
