Thyme and Roasted Garlic Compound Butter

Compound butter is the highest return on effort in a home kitchen. Ten minutes of work makes a log that lives in the freezer for two months and turns a plain steak, a piece of fish, a bowl of rice, or a slice of toast into something that tastes like it came from a restaurant kitchen.

Thyme is the herb that rewards technique. Pinch the top of the sprig, run your fingers down the stem against the direction of growth, and the leaves come off clean without bruising. Chopping thyme on the stem gives you woody bits that never soften, and bruised leaves go bitter and grey in fat.

Whip it rather than stirring it. A balloon whisk works air into softened butter and gives you a light, spreadable texture instead of a dense paste, and Roasted Garlic Grapeseed Oil folds in without breaking the emulsion the way melted butter would.

1 Tbsp

Ingredients

• 1 cup unsalted butter, softened to room temperature
• 2 Tbsp fresh thyme leaves, picked from the stems
• Use the right tool and pick the right whisk for the job
• 1 Tbsp Roasted Garlic Grapeseed Oil
• 6 cloves roasted garlic, mashed to a paste
• 1 tsp Date Bacon Vinegar
• 1 tsp flaky sea salt
• 1/2 tsp cracked black pepper
• Zest of 1 lemon

Instructions

1. Pick the thyme leaves from the stems by pinching the top and running your fingers down against the growth.
2. Whip the softened butter with a balloon whisk for 2 minutes, until it lightens in colour and texture.
3. Fold in the roasted garlic paste and the Roasted Garlic Grapeseed Oil.
4. Add the thyme, lemon zest, Date Bacon Vinegar, salt, and pepper. Whisk just until evenly distributed.
5. Scrape the butter onto a sheet of parchment and roll it into a tight log, twisting the ends closed.
6. Chill at least 2 hours before slicing. Keeps 2 weeks refrigerated or 2 months frozen.
7. Cut coins straight from the log and drop them onto hot food so they melt on the plate.
