Scallion Smashed Potatoes

Smashed potatoes exist for the surface area. Boiling them first and then crushing them flat before they hit the oven creates ridges and torn edges that go genuinely crisp, which is something a whole roasted potato can never do.

Scallions go in at two different points and that is deliberate. The white parts cook into the potato and turn sweet, and the raw green tops go over the top at the end for the sharp, fresh bite. Chop them thin so they scatter evenly instead of landing in clumps.

Roasted Garlic Grapeseed Oil is the right fat here because its smoke point is high enough for a hot oven and its flavour survives the heat. Serve them straight out of the pan while the edges are still shattering.

Ingredients

• 2 lb baby Yukon Gold potatoes
• 1 bunch green onions, thinly chopped
• 3 Tbsp Roasted Garlic Grapeseed Oil
• 2 Tbsp chopped herbs, gathered with the blade
• 1 tsp kosher salt, plus more for the water
• 1/2 tsp cracked black pepper
• 1/4 cup grated Parmesan

Instructions

1. Preheat the oven to 450°F and place a sheet pan inside to heat.
2. Boil the potatoes in well-salted water for 18 to 20 minutes, until a knife slides through with no resistance.
3. Drain and let the potatoes steam dry in the colander for 5 minutes.
4. Toss them with 2 Tbsp of the Roasted Garlic Grapeseed Oil and the white parts of the green onions.
5. Spread the potatoes on the hot sheet pan and press each one flat with the bottom of a glass.
6. Roast 25 to 30 minutes without turning, until the edges are deeply browned and crisp.
7. Finish with the remaining oil, the green scallion tops, Parmesan, salt, and pepper.
