Roasted Garlic Chicken Bone Broth

A good broth is not a recipe so much as a habit. Every roast chicken leaves behind a carcass, and every carcass is four cups of something far better than anything sold in a carton. The bones carry the collagen, the vegetables carry the sweetness, and time does the rest of the work while you do something else.

Roasted garlic is what separates this from a plain stock. Smashed cloves go in whole and mellow out over the long simmer into something round and almost sweet, and a spoonful of Roasted Garlic Grapeseed Oil at the finish brings that flavour forward instead of letting it disappear into the pot.

Skim it, strain it, and cool it uncovered before it goes in the refrigerator. What you get is a clear, deeply savoury broth that works as a base for soup, a braising liquid for grains, or a cup on its own when someone in the house is under the weather.

Ingredients

• 1 roasted chicken carcass, bones and skin
• 6 cups cold water
• 1 head garlic, cloves smashed
• 2 carrots, cut in large chunks
• 2 ribs celery, cut in large chunks
• 1 yellow onion, halved
• 3 sprigs fresh parsley
• 1 bay leaf
• 1 tsp kosher salt, plus more to taste
• 1 tsp Roasted Garlic Grapeseed Oil, to finish

Instructions

1. Place the chicken bones in a stockpot and cover with 6 cups of cold water. Starting cold draws more flavour out of the bones.
2. Bring to a bare simmer over medium heat. Skim off any grey foam that rises in the first ten minutes.
3. Add the smashed garlic, carrots, celery, onion, parsley, and bay leaf.
4. Simmer uncovered on low for 3 to 4 hours. Never let it boil — a rolling boil emulsifies the fat and clouds the broth.
5. Strain through a fine mesh sieve into a clean container and discard the solids.
6. Season with salt and stir in the Roasted Garlic Grapeseed Oil.
7. Cool uncovered to room temperature, then refrigerate up to 5 days or freeze up to 3 months.
