Ginger Scallion Sauce

This is the sauce that makes plain food worth eating. Poached chicken, steamed rice, roasted vegetables, a fried egg — anything that is honest but quiet gets loud with a spoonful of this on top. It takes ten minutes and lives in the refrigerator for a week, getting better for the first two days.

The knife work is the whole recipe. Slice the ginger into thin coins across the grain first, because trying to mince a whole knob directly gives you fibrous strings that never disappear. Once you have coins, stack them, cut them into matchsticks, then rock the blade over the pile until it is genuinely fine.

Hot oil poured over the aromatics is what sets it. The oil has to be shimmering — pour it warm and you get raw ginger in greasy oil, pour it hot and the whole bowl blooms and smells like a restaurant kitchen. A splash of Date Bacon Vinegar at the end keeps it from tasting flat.

Ingredients

• 1 large knob ginger, about 4 inches
• First slice the ginger thin
• Then mince the ginger fine
• 1 bunch scallions, thinly sliced
• 3/4 cup neutral oil
• 2 Tbsp Roasted Garlic Grapeseed Oil
• 1 tsp Date Bacon Vinegar
• 1 1/2 tsp kosher salt
• 1 tsp toasted sesame oil

Instructions

1. Slice the ginger into thin coins across the grain, stack them into matchsticks, and mince fine. You want about 1/3 cup.
2. Combine the minced ginger, sliced scallions, and salt in a heatproof bowl.
3. Heat the neutral oil in a small pan until it shimmers and a scallion dropped in sizzles immediately.
4. Pour the hot oil over the ginger and scallions. It should crackle hard for several seconds.
5. Stir once and let it cool to room temperature.
6. Fold in the Roasted Garlic Grapeseed Oil, the Date Bacon Vinegar, and the sesame oil.
7. Store refrigerated up to 1 week. Bring to room temperature before serving so the oil loosens.
