Garden Herb Omelette Breakfast Plate

A diner omelette and a hotel omelette use the same three eggs. The difference is that one arrives as a folded yellow shape in the middle of a plate and the other arrives with potatoes stacked behind it, one point of red beside it, and a rim you could set a napkin on. That difference takes about twenty seconds and no extra ingredients.

Tuscan Herbs Extra Virgin Olive Oil goes in the pan instead of butter, which changes how the eggs behave. Butter browns and gives you those freckled spots; the herb oil stays pale and lets the omelette come out the even yellow that reads as expensive. It also seasons the eggs from underneath, so you need less salt in the mix.

Low heat is the whole technique. Eggs cooked hot puff, tear, and turn rubbery at the fold. Cooked over medium-low with constant small movements, they set into a custard you can roll out of the pan in one piece. Then the plate gets built in a fixed order, the same way a line cook does it four hundred times a week.

Ingredients

• 3 large eggs
• 1 tbsp Tuscan Herbs Extra Virgin Olive Oil
• 1 tbsp chopped parsley, chives, and tarragon
• 2 tbsp shredded sharp cheddar
• 1 cup roasted breakfast potatoes, hot
• 1 breakfast sausage or 2 slices bacon
• 1 strawberry, fanned
• Kosher salt and white pepper
• One point of color to garnish the omelette plate
• Off-center placement to plate a breakfast wedge with a clean rim

Instructions

1. Beat the eggs with a pinch of salt, white pepper, and a teaspoon of water until completely uniform in color with no streaks of white.
2. Warm the Tuscan Herbs Olive Oil in an 8-inch nonstick pan over medium-low. It should never shimmer.
3. Pour in the eggs. Wait 10 seconds, then stir with small circles while shaking the pan until you have soft curds with a wet surface.
4. Stop stirring and let the base set for 20 seconds. Scatter the herbs and cheddar across the middle third.
5. Tilt the pan away from you, fold the near edge over the filling, then roll the omelette out onto a warm plate seam side down.
6. Build the plate in order: potatoes stacked behind the omelette, sausage leaning against the potatoes, omelette front and center.
7. Add the fanned strawberry as the single point of color, wipe the rim, and serve.
