Deglazed Steak Bites over Herb Rice

Steak bites are a weeknight answer to a cut that would otherwise need a long cook. Sirloin cut into cubes hits the pan with far more surface area than a whole steak, which means more browning in a fraction of the time.

Work in batches and resist crowding the pan. Too much meat at once drops the temperature and the cubes release their liquid and simmer instead of searing — you end up with grey beef and a watery pan, which no amount of deglazing will rescue.

A sharp knife is what makes the cubes even, and even cubes are what make them all finish at the same moment. Run the blade over a honing steel before you start; it takes ten seconds and changes how the whole plate turns out.

Ingredients

• 1 1/2 lb sirloin, cut in 1-inch cubes
• 2 Tbsp Roasted Garlic Grapeseed Oil
• 3 Tbsp Date Bacon Vinegar, for deglazing
• 1 knife honed before cutting the sirloin
• 3 cloves garlic, minced
• 2 Tbsp unsalted butter
• 2 cups cooked jasmine rice
• 3 Tbsp mixed fresh herbs, chopped
• 1 tsp kosher salt
• 1/2 tsp cracked black pepper

Instructions

1. Hone your knife, then cut the sirloin into even 1-inch cubes and pat them dry.
2. Season the cubes with salt and pepper and let them sit 15 minutes.
3. Heat the Roasted Garlic Grapeseed Oil in a heavy skillet until it shimmers.
4. Sear the beef in two batches, 90 seconds per side, without moving the cubes. Remove each batch to a plate.
5. Lower the heat, add the garlic and butter, and cook 30 seconds.
6. Pour in the Date Bacon Vinegar and scrape up every browned bit from the bottom of the pan.
7. Return the beef and any juices, toss to coat, and serve over jasmine rice folded with the fresh herbs.
