Crispy Skillet Steak with Champagne Deglaze

A crust is a moisture problem before it is a heat problem. Water on the surface of the steak has to boil off before the meat can brown, and while that is happening the steak is steaming in its own liquid and turning grey. Dry the surface properly and the browning starts almost immediately.

The pan matters just as much. It needs to be genuinely hot before the steak goes anywhere near it — hot enough that the oil shimmers and moves like water. A lukewarm pan gives you the same grey exterior that a wet steak does, for the same reason.

Once the steak comes out, the Marc De Champagne Vinegar goes in to lift the fond off the bottom. Two minutes of deglazing turns what is stuck to the pan into a sauce, and the steak rests while you make it.

Ingredients

• 2 ribeye or strip steaks, 1 1/4 inch thick
• 1 tsp kosher salt, applied after patting dry
• 1/2 tsp cracked black pepper
• 1 Tbsp grapeseed oil, in a preheated pan
• 2 Tbsp Marc De Champagne Vinegar
• 2 Tbsp unsalted butter
• 3 sprigs fresh thyme
• 2 cloves garlic, smashed

Instructions

1. Pat both sides of each steak completely dry with paper towel. Repeat until the towel comes away dry.
2. Season generously with salt and pepper and let the steaks sit at room temperature for 30 minutes.
3. Heat a heavy skillet over medium-high until a drop of water evaporates on contact, then add the grapeseed oil.
4. Lay the steaks down away from you and do not move them for 3 minutes.
5. Flip once, add the butter, thyme, and smashed garlic, and baste for 2 to 3 minutes to an internal temperature of 130°F for medium-rare.
6. Transfer the steaks to a board to rest for 8 minutes.
7. Pour the Marc De Champagne Vinegar into the hot pan, scrape up the fond, and spoon the pan juices over the sliced steak.
