Spit'n Fire Double-Heat Brisket

Double heat means two things: two oven temperatures and the hottest sauce in the line. Three hours covered at 300°F breaks the collagen down into gelatin, which is the only thing that makes a brisket tender. Then the oven jumps to 375°F for twenty-five minutes, and that is where the Spit'n Fire sets into a crust instead of a coating.

Foil on tight for the entire first three hours. Brisket is a muscle that worked for a living and it needs a humid environment to give up. Every gap in the foil lets steam out, and a brisket that dries out at hour two never comes back no matter how long you leave it in.

Fifteen minutes of rest, then find the grain and cut across it. Brisket has grain running in two directions between the point and the flat, so it changes partway through the cut and you have to turn the meat. Slice with the grain instead of across it and even a perfectly cooked brisket eats stringy.

Ingredients

• 4 lb beef brisket, trimmed
• 2 teaspoons kosher salt
• 1 teaspoon black pepper
• 1 teaspoon smoked paprika
• 1½ cups Mr. PoPo's Spit'n Fire BBQ Sauce
• Before seasoning, trim a brisket flat
• After resting, slice across the grain and turn the meat when it changes

Instructions

1. Preheat the oven to 300°F (150°C).
2. Season the brisket on all sides with salt, pepper, and smoked paprika.
3. Place the brisket in a roasting pan, cover tightly with foil, and roast 3 hours until very tender.
4. Remove the foil and brush the brisket generously with Spit'n Fire BBQ Sauce.
5. Raise the oven to 375°F (190°C) and roast uncovered 20 to 25 minutes, basting once more with sauce.
6. Rest the brisket 15 minutes before slicing thinly across the grain.
7. Serve about 4 oz per person with extra sauce on the side.
