Smoked Chicken and Corn Dip with Pig Spit Swirl

Most hot dips are cream cheese with something in it, and most of them taste like cream cheese. Cutting half the cream cheese with Greek yogurt changes that. You lose none of the body and you gain enough acid that you can eat more than three bites, which is the actual test of a party dip.

Fold, do not stir, when the Pig Spit goes in. The point is a visible marble of sauce running through pale dip, so that every scoop pulls a different ratio. Stir it fully and you get a uniform orange bowl that looks like queso and tastes flatter, because your tongue stops noticing a flavor that never changes.

Smoked chicken breast is doing something no seasoning can fake. Smoke is a flavor you either put in with time and wood or you do not have, and a rotisserie or store-smoked breast gets you there in the length of one drive. Chop it fine so it disperses instead of clumping at the bottom of the dish.

¼ cup dip with chips or vegetables

Ingredients

• 1½ lb smoked chicken breast, finely chopped
• 2 cups frozen corn kernels, thawed and drained
• 8 oz light cream cheese, softened
• 1 cup plain Greek yogurt
• 1 cup shredded cheddar cheese
• ½ cup diced green onion
• 1 teaspoon smoked paprika
• ½ teaspoon garlic powder
• ½ teaspoon black pepper
• ¾ cup Mr. PoPo's Pig Spit BBQ Sauce, divided
• 1 tablespoon chopped fresh chives
• If you are smoking your own, season the chicken by hand
• To finish, pour the sauce off the heat in a single ribbon

Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a shallow baking dish.
2. In a large bowl, beat the cream cheese and Greek yogurt together until smooth.
3. Stir in the chopped smoked chicken, corn, cheddar, green onion, smoked paprika, garlic powder, and black pepper until evenly mixed.
4. Fold in ½ cup of the Pig Spit BBQ Sauce with just a few passes, so it marbles through instead of blending in.
5. Transfer the mixture to the prepared dish and smooth the top.
6. Bake 18 to 20 minutes, until hot and bubbling around the edges.
7. Drizzle the remaining ¼ cup of sauce over the top, scatter the chives, and serve warm with baked tortilla chips or vegetable sticks.
