Pig Spit BBQ Meatball Skewers

Mr. PoPo's Pig Spit is the mildest of the four, the one you can hand to anyone at the table, and it is the right sauce for something people eat off a stick without warning. Thirty-six meatballs, three to a skewer, twelve servings. The math is deliberate, because a party tray that portions itself is a tray that does not run out unevenly.

Soak the wooden skewers thirty minutes before they go anywhere near heat. Dry wood catches at oven temperature and you end up with charred handles and a smell that gets into the meat. Thirty minutes in water buys you the three to five minutes at the end that sets the glaze.

Meatballs bake first, get skewered second, and go back in with sauce third. Threading raw meat onto skewers means they cook unevenly against each other and lose their shape. Baked on a flat pan first, they hold round, and then the last few minutes with warm thinned sauce is what turns them glossy instead of wet.

1 skewer of 3 meatballs

Ingredients

• 2½ lb lean ground beef
• 1 cup plain dry breadcrumbs
• 2 large eggs
• ½ cup finely minced yellow onion
• 2 teaspoons kosher salt
• 1 teaspoon black pepper
• 1 teaspoon garlic powder
• 1½ cups Mr. PoPo's Pig Spit BBQ Sauce, divided
• ¼ cup water
• 12 each wooden skewers, soaked in water 30 minutes
• Into the mix, season the beef properly
• In the last few minutes, take the glaze to glossy and pull them out

Instructions

1. Preheat the oven to 400°F (205°C) and line a sheet pan with parchment.
2. In a large bowl, combine the ground beef, breadcrumbs, eggs, minced onion, salt, pepper, garlic powder, and ½ cup of the Pig Spit BBQ Sauce. Mix gently until just combined.
3. Portion the mixture into 36 equal meatballs and arrange them on the prepared pan.
4. Bake 15 to 18 minutes, until cooked through and lightly browned.
5. In a small saucepan, warm the remaining 1 cup of sauce with the water over low heat until glossy.
6. Thread 3 meatballs onto each soaked skewer, brush generously with the warm sauce, and return to the oven 3 to 5 minutes to set the glaze.
7. Serve 1 skewer per person, about 3 oz of cooked meat.
