Mini Sweet Pepper Relish

This is a condiment built entirely out of knife work. Mini sweet peppers are already sweet and thin-walled, so nothing needs to cook down for an hour — the whole character of the relish comes from how small and how evenly you cut them.

Slice the peppers into thin strips first, then turn those strips into a proper brunoise. It is a slower job than a rough chop and it is the entire point: uniform dice means every spoonful carries the same balance of pepper, onion, and acid instead of one bite of raw pepper and the next of vinegar.

Basil Extra Virgin Olive Oil and Red Onion Vinegar hold it together. Spoon it over grilled fish, fold it into cream cheese, pile it on a burger, or set it out with crackers and let people work it out for themselves.

Sauce & Dressing

Ingredients

• 12 oz mini sweet peppers, thinly sliced
• 1/2 red onion, cut brunoise
• 3 Tbsp Basil Extra Virgin Olive Oil
• 2 Tbsp Red Onion Vinegar
• 1 tsp granulated sugar
• 1/2 tsp kosher salt
• 1/4 tsp crushed red pepper flakes
• 2 Tbsp fresh basil, torn

Instructions

1. Trim and seed the mini peppers, then slice them into thin strips.
2. Turn the strips ninety degrees and cut across into a fine, even dice.
3. Cut the red onion brunoise so the pieces match the pepper in size.
4. Combine the peppers and onion in a bowl with the salt and sugar. Let them sit 10 minutes to draw out moisture.
5. Stir in the Red Onion Vinegar and crushed red pepper, then whisk in the Basil Extra Virgin Olive Oil.
6. Fold in the torn basil just before serving.
7. Keeps refrigerated in a sealed jar for up to 1 week. The flavour is better on day two.
