Hot Spit Habanero BBQ Shrimp Cups

Phyllo cups exist so you can serve something warm on a tray without plates or forks. They also give you an exact portion, which is why twenty-four of them turn into twelve servings with no math and no argument. The shells come frozen and they are one of the few shortcuts worth taking.

Shrimp get cooked separately and then chopped, and there is no way around it. Whole shrimp in a shell cannot be eaten in one bite, and shrimp cooked inside the cup steam instead of roast and dump water into the pastry. Six to eight minutes on their own pan, cooled slightly, then chopped small enough that every spoonful gets shrimp, corn, and pepper.

The bake at the end is five to seven minutes and it is only there to warm the filling and re-crisp the shells. Any longer and the pastry goes dark and the shrimp turn to rubber. Fill them close to service, warm them fast, and get the tray out while the sauce is still shining.

2 filled phyllo cups

Ingredients

• 24 each frozen mini phyllo shells
• 1½ lb medium shrimp, peeled and deveined
• 1 tablespoon olive oil
• ½ teaspoon kosher salt
• ¼ teaspoon black pepper
• ¾ cup Mr. PoPo's Hot Spit BBQ Sauce
• 1 cup corn kernels, cooked and cooled
• ½ cup diced red bell pepper
• ¼ cup diced green onion
• Off the heat, pour the sauce off the heat
• On the pan, turn with tongs, once and leave them alone

Instructions

1. Preheat the oven to 375°F (190°C) and arrange the phyllo shells on a sheet pan.
2. Toss the shrimp with olive oil, salt, and pepper and spread them on a separate lined pan.
3. Roast the shrimp 6 to 8 minutes, just until opaque. Cool slightly, then chop into small pieces.
4. In a mixing bowl, combine the chopped shrimp, corn, red bell pepper, green onion, and ½ cup of the Hot Spit BBQ Sauce.
5. Spoon the filling into the phyllo shells, dividing it evenly.
6. Drizzle the remaining ¼ cup of sauce over the tops.
7. Bake the filled cups 5 to 7 minutes until warmed through. Serve 2 cups per person.
