Hot Spit Fire-Kissed Grilled Chicken

Bone-in, skin-on thighs are the most forgiving thing you can put on a grill. The bone slows the heat down, the fat under the skin bastes the meat as it renders, and the difference between 165°F and 180°F is barely noticeable. A chicken breast punishes a thirty-second mistake; a thigh shrugs it off.

Skin side goes down first, always. Cold skin on a hot grate renders and crisps in the first six minutes while the meat above it is still gentle. Flip it early and the fat never renders, so you end up with rubbery skin nobody eats. Six to eight minutes, one flip, and that is the whole cooking method.

Hot Spit gets brushed on only in the last few minutes, and that is not a stylistic choice. This sauce has sugar in it, sugar burns at grill temperature in about four minutes, and burnt sugar tastes like ash no matter how good the habanero underneath it is. Marinate in it, cook without it, then paint it on at the end.

1 chicken thigh

Ingredients

• 12 each bone-in, skin-on chicken thighs
• 1 teaspoon kosher salt
• ½ teaspoon black pepper
• 1 cup Mr. PoPo's Hot Spit BBQ Sauce, plus more for serving
• 2 tablespoons olive oil
• From a height, season the chicken by hand
• For a brighter version, grill chicken with citrus alongside the sauce

Instructions

1. Pat the chicken thighs completely dry and season with salt and pepper.
2. Whisk the Hot Spit BBQ Sauce and olive oil together in a bowl.
3. Place the chicken in a shallow pan and coat with half of the sauce mixture. Marinate in the refrigerator 30 to 60 minutes.
4. Preheat the grill to medium heat and oil the grates lightly.
5. Grill the chicken skin side down first for 6 to 8 minutes, then flip and cook 6 to 8 minutes more, brushing with the remaining sauce mixture only in the last few minutes.
6. Cook until the internal temperature reaches 165°F (74°C).
7. Serve 1 thigh per person with extra warmed sauce on the side.
