Hot Spit Burnt Ends

Burnt ends are not scraps. They are the fatty point of the brisket, cooked twice on purpose, and the second cook is where the whole dish is won or lost. Hot Spit sits one step up the Mr. Popo's ladder from Pig Spit. There is real pepper heat behind the sweetness, and against beef fat that heat is exactly what you want.

Work the point, not the flat. The flat is lean and it dries out in a braise pan. The point carries intramuscular fat that renders into the sauce and makes the cube taste like candy instead of jerky. Cut everything to the same size, roughly one and a half inches, or the small ones turn to leather while the big ones are still tight.

The second cook is uncovered. People pan them, cover them with foil, and wonder why they came out wet and pale. Leave the pan open so the sauce reduces onto the meat instead of pooling under it. When the cubes have a tacky, dark shell and the pan is nearly dry, they are done.

Ingredients

• 4 lb brisket point, fat cap trimmed to 1/4 inch
• 2 Tbsp kosher salt
• 2 Tbsp coarse black pepper
• 1 Tbsp granulated garlic
• 1 1/4 cups Mr. Popo's Hot Spit BBQ Sauce
• 1/4 cup dark brown sugar
• 4 Tbsp unsalted butter, cut into pats
• 1 Tbsp cider vinegar
• Even cubes cook evenly — cut the point

Instructions

1. Season the whole point on all sides with salt, pepper, and garlic. Rest 1 hour.
2. Smoke at 250°F, fat cap up, until the internal temperature reads 195°F, about 6 hours. Rest 30 minutes.
3. Cut the point into even 1 1/2 inch cubes. Same size across the board.
4. Spread the cubes in a single layer in a foil pan. Scatter the brown sugar and butter over the top.
5. Pour on 1 cup of the Hot Spit and toss to coat. Leave the pan uncovered.
6. Back on at 250°F for 90 minutes, tossing once, until the sauce has reduced onto the cubes and the pan is nearly dry.
7. Finish with the vinegar and the last 1/4 cup of sauce off the heat. Serve hot.
