Hot Spit BBQ Brisket Quesadillas

This is what leftover brisket is for. A quesadilla asks nothing of the meat except that it be shredded and warm, and the flour tortilla does the job a bun would do without any of the bulk. Cut into wedges it becomes finger food, which is the only way twenty-four of anything gets eaten standing up.

Mr. PoPo's Hot Spit sits one rung above Pig Spit, with habanero doing the work, and it goes in twice for a reason. Half a cup mixed into the brisket seasons the filling from inside. The last quarter cup brushed on after griddling gives you the sauce flavor raw and bright, because anything that hits a hot pan loses its top notes.

Cheese goes down first, against the tortilla, on both sides of the fold. It melts into glue and holds the wedge together when someone picks it up. Brisket on top of bare tortilla slides out the second you cut it, and a quesadilla that falls apart on the platter is a quesadilla nobody takes.

1 quesadilla wedge

Ingredients

• 12 each 6-inch flour tortillas
• 2 cups shredded cooked beef brisket
• 1½ cups shredded Monterey Jack cheese
• ¾ cup Mr. PoPo's Hot Spit BBQ Sauce
• 2 tablespoons canola oil for griddling
• ¼ cup chopped cilantro (optional)
• Before shredding, slice across the grain
• Starting from raw, trim a brisket flat down to a quarter inch of fat

Instructions

1. Combine the shredded brisket with ½ cup of the Hot Spit BBQ Sauce in a bowl.
2. Lay the tortillas out flat. On half of each one, sprinkle cheese, add a spoonful of the brisket mixture, then fold the tortilla over into a half-moon.
3. Brush a large skillet or griddle lightly with canola oil and heat over medium.
4. Cook the quesadillas in batches, 2 to 3 minutes per side, until the tortillas are crisp and the cheese has melted through.
5. Brush the finished quesadillas lightly with the remaining ¼ cup of sauce and scatter cilantro over the top if you are using it.
6. Cut each quesadilla into 2 wedges and serve 1 wedge per person.
