Hand-Cut Steak Fries

Frozen fries are engineered to be consistent, and consistency is the only thing they have on a potato you cut yourself. A hand-cut fry has irregular edges that catch the oil, a starchy interior that stays fluffy, and a flavour that actually tastes like potato.

The double fry is not optional. The first pass at a lower temperature cooks the inside through without colouring it, the rest lets the surface dry, and the second pass at high heat is what builds the crust. Skip a stage and you get a fry that is either pale or hollow.

Season them the second they come out of the oil, while the surface is still hot enough to hold the salt. A salt pig on the counter makes that easy — a pinch from above, from a height, so it lands evenly instead of in one spot.

Ingredients

• 4 large russet potatoes, cut into thick batons
• 6 cups peanut or canola oil, for frying
• 2 tsp kosher salt, seasoned from a salt pig
• 1/2 tsp garlic powder
• 1/4 tsp cracked black pepper
• 2 Tbsp chopped fresh parsley

Instructions

1. Scrub the potatoes and cut them lengthwise into batons about a half inch thick. Keep them uniform so they cook at the same rate.
2. Soak the cut fries in cold water for 30 minutes to rinse off surface starch, then dry them completely.
3. Heat the oil to 325°F. Fry in batches for 5 minutes — they should stay pale.
4. Lift them out and rest on a rack for at least 10 minutes.
5. Raise the oil to 375°F and fry again in batches for 3 to 4 minutes, until deep golden and crisp.
6. Drain briefly and season immediately with salt, garlic powder, and pepper from a height so it lands evenly.
7. Toss with parsley and serve right away.
