Cucumber Coin Salad with Basil Olive Oil

This is the plainest recipe on the site and the one most likely to get eaten standing at the counter. Four ingredients, no cooking, no cleverness. Its entire quality depends on how evenly you cut the cucumber, which is exactly why it belongs here.

A cucumber is mostly water, so everything you add either sits on the surface or slides off. Basil Extra Virgin Olive Oil clings the way a plain oil does not, and Red Onion Vinegar gives you onion flavor without raw onion crunching around the bowl. Salt goes on last, right before serving, because salt pulls water out and turns a crisp salad into a puddle in about ten minutes.

Cut the coins thin and identical, and each one carries the same amount of oil, vinegar, and salt. Cut them at random thicknesses and you get a bowl where some bites are bland and some are sharp. That is the whole lesson, and it applies to every vegetable you will ever slice.

Ingredients

• 2 English cucumbers, cold
• 3 tbsp Basil Extra Virgin Olive Oil
• 1 tbsp Red Onion Vinegar
• Flaky sea salt, added at the last minute
• Cracked black pepper
• A few torn basil leaves
• Claw grip and a sharp knife to slice the cucumber evenly
• Flat of the blade to gather the slices off the board

Instructions

1. Trim both ends off each cucumber so it sits flat and cannot roll.
2. Slice into coins about an eighth of an inch thick. Keep your knuckles curled, keep the knife tip on the board, and let the blade travel forward rather than straight down.
3. Slide the flat of the blade under the pile and move the coins to a wide bowl in one pass. Never scrape with the cutting edge.
4. Add the Basil Olive Oil and Red Onion Vinegar and turn the coins gently with your hands until every surface is glossy.
5. Shingle the coins onto a chilled plate in overlapping rows.
6. Finish with flaky salt, pepper, and torn basil, then serve within ten minutes.
