Basil and Red Onion Emulsified Vinaigrette

A vinaigrette that separates on the plate was never emulsified in the first place. The fix is not more whisking — it is the right order and a little mustard, which holds the oil and the acid together long enough to actually dress a salad.

Start with everything except the oil. Whisk the vinegar, mustard, honey, and salt into a smooth base, then add the Basil Extra Virgin Olive Oil in a thin stream while the whisk keeps moving. Dump the oil in all at once and it will break every time.

The acid is doing more than making it tart. Red Onion Vinegar is what keeps the dressing from tasting flat and heavy, and it is the reason this holds up on sturdy greens, grain bowls, and roasted vegetables rather than only on delicate lettuce.

Sauce & Dressing

3/4 cup

2 Tbsp

Ingredients

• 3 Tbsp Red Onion Vinegar
• 1 tsp Dijon mustard
• 1 tsp honey
• 1/2 cup Basil Extra Virgin Olive Oil
• 1 Tbsp fresh lemon juice
• 1 small shallot, minced
• 1/2 tsp kosher salt
• 1/4 tsp cracked black pepper

Instructions

1. Combine the Red Onion Vinegar, Dijon mustard, honey, minced shallot, and salt in a bowl.
2. Whisk until the mustard is fully dissolved and the mixture looks uniform.
3. Add the Basil Extra Virgin Olive Oil in a slow, thin stream while whisking constantly.
4. Keep whisking until the dressing thickens slightly and turns opaque — that is the emulsion holding.
5. Whisk in the lemon juice and season with cracked black pepper.
6. Taste and adjust with a pinch more salt or a few drops more vinegar.
7. Store refrigerated up to 5 days. Let it come to room temperature and re-whisk before serving.
