Basil Olive Oil Grilled Shrimp Skewer

Three shrimp on a stick, fifteen minutes in a basil olive oil marinade, and two minutes a side in a hot pan. This is the fastest genuinely impressive appetizer in the library.

Shrimp are lean enough that they take on whatever fat you give them, which is exactly why the Basil Extra Virgin Olive Oil matters here — the herb infusion carries straight into the flesh rather than sitting on the surface. Lemon zest holds the aromatic oils that lemon juice loses to heat, so the zest goes into the marinade and the juice goes in for brightness. Soak the wooden skewer first and it will not scorch.

Instructions

1. In a small bowl, whisk together Basil Extra Virgin Olive Oil, lemon zest, salt, black pepper, and lemon juice.

2. Add shrimp and toss to coat. Marinate in the refrigerator for 10–15 minutes.

3. Thread shrimp onto the soaked wooden skewer.

4. Heat a small grill pan or skillet over medium-high heat.

5. Cook shrimp skewer for 2–3 minutes per side, or until shrimp are pink and opaque.

6. Serve immediately as a single appetizer portion.
